Peanut Butter Cups (Vegan, Gluten-Free, Lower-Sugar)

Peanut butter and chocolate are a classic match made in heaven. But this combination doesn’t have to be laden in sugar. These vegan (and gluten-free) peanut butter cups are a perfect lower-sugar way to satisfy your sweet craving.

This recipe can be altered to fit your sweetness preference. If you prefer the bitterness of the dark chocolate, then you can omit the maple syrup. If you prefer a bit of extra sweetness, add a little more maple syrup.

Makes approximately 10

 Prep Time: 25 minutes

 

Peanut Butter Filling Ingredients:

½ cup                         all-natural peanut butter

2 tablespoons           maple syrup

1 tablespoon             coconut flour

 

Chocolate Coating Ingredients:

1 cup                          dark chocolate

1 tablespoon             maple syrup

10 muffin liners

 

Peanut Butter Cups Directions:

  1. Combine the peanut butter, maple syrup, and coconut flour in a bowl and stir until mixed. Set aside for 5 minutes to allow it to thicken.

  2. Melt the dark chocolate in the microwave in 25-second increments to prevent burning. Or, in a bowl over boiling water.

  3. Place the muffin liners in a muffin pan.

Work quickly for the next 3 steps:

  1. Coat the bottoms of the muffin liners with a thin layer of the melted chocolate.

  2. Drop about ½ a tablespoon of peanut butter mixture on top of each chocolate layer.

  3. Use the remaining melted chocolate to cover the peanut butter drops.

  4. Place in the freezer for 10 minutes or the fridge for 20 minutes.

  5. Enjoy!
