Lunchbox: Black Bean Burrito with Pico De Gallo and Banana Chocolate Cookies

This packed lunch is loaded with nutrients and is perfect for kids and adults. It can be made both vegan and gluten-free. It’s also peanut-free and nut-free.

In this lunchbox we have:

  • Black bean burrito with homemade pico de gallo (vegan and gluten-free)

  • Strawberries and pear

  • Carrots and cucumber sticks

  • Hummus

  • Homemade banana chocolate cookies (vegan and gluten-free)

Different veggies and fruit can be substituted to add variety.

Black Bean Burritos

Black Bean Burrito Ingredients

10-inch corn or whole wheat tortilla

¼ cup cooked rice

¼ cup black beans

½ teaspoon garlic powder

Salt and pepper to taste

2 tablespoons pico de gallo

2 slices of avocado

1 tablespoons of grated cheddar cheese (or vegan cheese)

 

Black Bean Burrito Directions

  1. In a pan on medium heat, combine the black beans, garlic powder, salt, and pepper. Allow the beans to absorb the flavour for about 5 minutes.

  2. Assemble the ingredients in a tortilla and enjoy!

Pico de Gallo

Pico de Gallo Ingredients

1 large tomato (diced)

¼ cup white onion (diced)

¼ cup bell pepper (diced)

2 tablespoons cilantro (chopped)

1 tablespoon lime juice

½ teaspoon garlic powder

Salt and pepper to taste

 

Pico de Gallo Directions

  1. Combine all of the ingredients and enjoy!

Banana Chocolate Cookies

Banana Chocolate Cookies Ingredients

1 ripe banana

1 teaspoon vanilla

1 tablespoon melted coconut oil

1 tablespoon almond milk

1 tablespoon maple syrup

2 teaspoons chia seeds

2 teaspoons cocoa powder

1 cup rolled oats

¾ cup (vegan) chocolate chips

 

Banana Chocolate Cookies Directions

  1. Mash the banana.

  2. Stir in the almond milk, vanilla, coconut oil and maple syrup.

  3. Stir in the chia seeds, cocoa powder, rolled oats, and chocolate.

  4. Let sit for 15 minutes.

  5. Bake at 350°F for 15 minutes.
